Donald Avigne has enjoyed the opportunity to have worked a number of notable interim consulting assignments, to include the opening of the Red Rooster at the Woodstock Inn and Resort in Woodstock, VT, and most recently as interim Manager at the Tree Room at Sundance Resort in Sundance, Utah. At the Tree Room Donald set forth a modified business plan for the Tree Room for 2010, re-worked floor and service standards, modified recipe specifications with the chef du cuisine, and tightened overall cost controls.
Donald is now serving as Executive Chef at Romaldo's at the Hearthstone Inn in Sturbridge, MA. At Romaldo's Donald has elevated the food quality, introduced new menu items, educated servers about food preparation, and worked on floor and service standards with the Innkeeper. Donald's efforts have served to reposition Romaldo's, which has enjoyed a distinct and sustained upturn in business since Donald began his assignment. Donald also has an exceptional knowledge of wine, and the proper pairings of wine and food.
